Purpose: Koji-centered Japanese fermentation gave rise to global products like soy sauce, miso, and sake. However, fermentation should be understood not just as a source of traditional goods, but as a versatile technology. Applied to diverse raw materials, it generates new foods, value, and broader possibilities beyond the conventional Japanese context.

Method: This presentation examines fermentation as a technological option in food development. Beyond the final seasoning stage (e.g., soy sauce or miso), fermentation can be positioned at the processing stage to transform ingredients. Accordingly, I have collaborated with leading Western restaurants to develop fermented seasonings using non-traditional raw materials, including food waste and underutilized goods. This demonstrates fermentation's capacity to regenerate ingredients and create culinary and economic value. In parallel, I promoted educational initiatives in culinary schools and universities.

Results: These activities suggest koji fermentation functions as an adaptable technological platform rather than a fixed cultural form. Applied to non-Japanese ingredients, it creates novel flavors, textures, and product categories. It also contributes to sustainability by converting food waste into value-added seasonings, an approach already utilized by internationally recognized restaurants. To expand its impact, I began incorporating fermentation into formal education: Brightwater Culinary School plans a pilot course, and Cornell’s Food Hackathon featured it as a challenge theme, sparking exploration at other universities.

Consideration: Japanese fermentation's future potential depends on being taught and applied as an adaptable technology, rather than solely as tradition. While traditional products remain essential, the process itself reveals broader applications. Fermentation provides distinctive flavors and recovers overlooked materials, transforming them into products with new culinary and economic value. Culinary schools can prepare chefs to use fermentation in flavor design, while food science programs can prepare R&D professionals for product innovation. Collaboration among academia, chefs, and manufacturers will further amplify this impact by linking theory, creativity, and scale.

Conclusion: Traditional Japanese fermentation is an expandable food technology, not merely cultural heritage. By applying its principles to new ingredients and educational frameworks, its potential extends far beyond exporting established products. The next stage is not only to preserve fermentation, but to teach, adapt, and scale it to create new foods and value from overlooked resources.
