Propionibacterium freudenreichii is a food-grade anaerobic bacterium widely used for the bioproduction of propionic acid, vitamin B12, and flavor-active metabolites in fermented foods. Despite its industrial relevance, variability in cultivation practices hinders reproducibility and scale-up. This work aims to establish standardized benchmarks and cultivation workflows for P. freudenreichii under anaerobic conditions, addressing strain management, media design, redox and oxygen control, growth kinetics, and productivity metrics. Defining clear performance benchmarks enables consistent process evaluation and optimization across laboratory and industrial settings. The proposed framework supports robust anaerobic bioprocess development and facilitates the scalable production of sustainable, fermentation-derived food ingredients.
