ミュータンス連鎖球菌は三種のグルコシルトランスフェラーゼGtfを有し、スクロースを基質としてグルカンを生産する。本研究では不溶性グルカン合成酵素欠損株ΔgtfB, ΔgtfC, ΔgtfBCのグルカン生産量、菌体フロック径、バイオフィルム(BF)形成量、BFの安定性を試験し、BF形成における不溶性グルカンの寄与を考察した。
