Edible fats and oil around us are mixtures composed of many kinds of triacylglycerols (TAG). Since the properties of fat and oil products are mainly determined by the structure, organization, and physical properties of TAG crystals, it is extremely important to know the microstructure of TAG and its phase behavior with temperature change for quality control of fat and oil products.Single crystal growth of fats and oil materials and X-ray CT were used to visualize and evaluate the microstructure of fats and oil.
