Peptides are easy to design at the molecular level, but they have poor electrical conductivity. In this study, we prepared a composite film of aspartame (DF) and reduced graphene oxide (rGO), a conductive filler, and investigated its application as a chemiresistive humidity sensor. The addition of hyaluronic acid (HA) as a matrix molecule enabled the formation of a uniform film and resulted in high sensitivity and good reproducibility to water vapor. These results demonstrate that the DF/rGO/HA composite film is a promising material for humidity sensors.
