To elucidate the effects of plasma-synthesized N2O5 gas on the secondary metabolism of strawberries, N2O5 gas was sprayed onto strawberry seedlings using an atmospheric-pressure air plasma device. Absorbance measurements of fruit extracts were conducted, and comparison with an untreated control group suggested that N2O5 treatment may affect anthocyanin content. In this presentation, we report the effects of treatment conditions, including the spraying method and exposure time of N2O5 gas, on anthocyanin content and discuss the underlying mechanisms of its action.
