In materials and biological systems, phase transitions often proceed in a spatially heterogeneous manner and across diverse time scales, making direct observation of their temporal evolution difficult. In this study, we regard spatially non-uniform phase distributions as implicit temporal samplings and develop a method to estimate phase transition sequences from a single spectral image by combining manifold learning with space–time transformation. Application examples are presented for the early-stage corrosion process of steel materials and the starch phase transition responsible for the texture of hand-stretched somen noodles.
