Soft electrons (low-energy electron beams) were used to sterilize the mold on lemon peer and to investigate the possibility of long-term preservation. Irradiation at 80- 250kV confirmed that the lemon peer could be sterilized and was mold-free over the long term. However, the cuticular layer of the lemon rind was destroyed by the electron beam, allowing oxygen to enter the lemon rind and causing the lemon peer to turn brown due to the enzyme Maillard reaction. Therefore, it was not possible to extend the shelf life of lemons with soft electrons.
