Lipid droplets are cell organelles that store neutral lipids, consisting of a neutral lipid core enclosed with a phospholipid monolayer. At the beginning of the lipid droplet formation, neutral lipids aggregate to form a droplet in between two phospholipid monolayers in the bilayer membrane. In this work, we investigated the interaction between nascent lipid droplets by incorporating neutral lipid droplets in supported bilayers and investigating their characteristics using fluorescence microscopy. The results showed that the droplet number density decreased with time due to Ostwald ripening.
