This study focuses on onions as a plant-based food beneficial for preventive healthcare and examines changes in potassium and polyphenol content induced by air plasma irradiation. Previous research suggested that potassium increased in the core while polyphenols increased throughout the onion, showing a correlation with NO3−. This study investigates the effect of storage temperature on potassium increase and clarifies the relationship between polyphenol content and NO3− concentration in different sections of the onion bulb.
