Monosodium glutamate (MSG) is the primary component of umami seasonings. Conventional measurement methods have faced challenges due to complex pretreatment procedures and lengthy measurement times. Therefore, in this study, we attempted to improve selectivity for MSG by introducing a molecular template into the inorganic semiconductor material MoS2, and to observe real-time electrical responses based on impedance changes associated with adsorption. TEM observation confirmed the formation of the template, and electrochemical impedance measurements confirmed a concentration-dependent response.
