Mung bean is an important economic crop that is a good source of protein, vitamins, antioxidants, fat, minerals, etc. Atmospheric or low-pressure plasma is a new technology of seed treatment. In this study, mung bean seeds were irradiated continuously for 10, 30, and 60 minutes and periodically for 30 and 60 minutes (10-minute irradiation cycle with a 48-hour interval of plasma) under different pressures of oxygen gas. The results showed that the vitamin-C, thiol, and antioxidant in the mung bean stem and roots were significantly improved compared to the control due to direct oxygen plasma treatment under different gas pressures and irradiation modes.
