In this study, the crystallization process of aspartame, a phenylalanine-containing dipeptide, was monitored in situ by Raman spectroscopy. The time evolution of the aromatic ring– and amide-derived peaks during crystallization was analyzed to capture the stepwise development of intermolecular interactions and structural ordering. In addition, the correlation between these spectral changes and the solution concentration was evaluated.
