Sensory evaluation has been widely used to assess the flavor of brewed products. However this method suffers from subjectivity and poor reproducibility. Recently electronic tongues based on electrochemical responses have attracted attention as objective evaluation tools but improvements in electrode stability and sensitivity are still required. In this study nitrogen doped diamond like carbon N-DLC films were fabricated by plasma CVD using CH4 and N2 mixed gases and the effects of nitrogen mixing ratio on film structure and electrochemical response were investigated. As a result the N2 40 percent condition showed high reproducibility and enhanced current response indicating its suitability as a reusable electrode for brewed product evaluation.
