Protein binding to the lipid droplet surface is believed to be regulated by interfacial tension and macromolecular crowding. In this study, we examined how protein adsorption and desorption at the triacylglycerol/water interface depend on the interfacial tension (i.e., phospholipid surface density) using pendant drop tensiometry. Our results show that both adsorption and desorption of proteins are strongly influenced by the phospholipid surface density at the interface.
