For the ripeness test of avocados, the correlation between the quantification method of applying pressure from the rind (called the wfc method) and the viscoelasticity of the pulp was investigated. The viscoelasticity of the flesh was determined by pressing the probe of a hardness tester from the flesh surface to a certain depth at a certain speed (elastic process) and then holding the probe stationary for 60 seconds (relaxation process), and determining the rate of change of stress during the elastic process and the relaxation time during the relaxation process. As a result of checking the correlation between these values and wfc values, a good correlation was observed for the maximum rate of change of stress, but no correlation was observed for the relaxation time.
