We have developed a portable flow-injection apparatus capable of quantitatively monitoring chemical phenomena in real time. We used this device to measure the pH-dependent color changes and absorption spectra of anthocyanins, and after demonstrating it at an open house event, we confirmed that it was effective in sparking interest among a wide range of people.
