Purpose: Pulsed electric field (PEF) treatment is a non-thermal processing technology that can be expected to improve water absorption, drying efficiency, and extractability of agricultural products. The objective of this study is to clarify the effects of PEF treatment on the amount of sugar extracted from sugar beet.
Methods: The sliced samples of sugar beet, ‘Kachihomare’, were PEF-treated at an electric field intensity of 1.25-4.00 kV/cm, pulse width 5.0 µs and 9.5 µs, and pulse numbers 100-5000 using the PEF instrument (Mitsubishi Electric Corporation).
Results: Under any conditions, the amount of sugar extraction at the initial stage of the process was increased by PEF treatment. The results suggested that PEF treatment may make it possible to extract sugars at a lower temperature.
